Taste the Tradition: Hudson Valley Maple Syrup Season

We may be dealing with some serious winter weather, but there's a light at the end of this cold, snowy tunnel- we know for certain that spring is on its way because our local maple syrup producers have started tapping their trees!

That’s right- it’s maple syrup season, and that means plenty of opportunities for you to experience the maple syrup harvest yourself! 

Local maple producers throughout the region are inviting you to come visit and enjoy their exciting hands-on programs exploring the journey of maple syrup from the tree to the table.

Did you know that the process of making Maple Syrup hasn't changed much since colonial times? Producers begin by drilling a small hole in the trunk of the Sugar Maple tree and inserting a small tube.

The clear, slightly sweetish maple sap collected from these “taps” is then boiled down to create the beautiful amber syrup we all know and love.  Would you believe that it takes more than 40 gallons of sap to produce just 1 gallon of syrup?  

New York is now the second largest producer of maple syrup in the US, and this proud tradition is gaining more momentum in response to consumer demands for healthier options.  Did you know that ounce for ounce Maple Syrup contains more calcium than milk, and more potassium than bananas?  Sweet!

Join in for an all-day pancake breakfast hot off the girl with Ashokan Maple Syrup. Learn to tap a tree, make syrup and more. Live music with Jay and Molly, hiking and fun for the entire family.
A fun open house where visitors can see how maple syrup and other related products are made, this family oriented event is sure to delight visitors of all ages. Visitors can sample and purchase the maple products in addition to participating in a variety of interactive activities to make your visit more memorable.  

Visitors will enjoy tours of the sugarbush and demonstrations of how the sugar shack operates as well as a sweet treat: samples of different grades of syrup will be offered and all maple products will be available for purchase.

Gather in the cozy log sugar house and watch as syrup is made using a wood fired 2'x6' evaporator.  Explore the variety of maple equipment on display and a live tapping demonstration.  Enjoy free samples of syrup with maple popcorn, apples in maple syrup, maple tea, lemonade and maple donuts available for purchase.

Hudson Valley Craft Cider Trail: Sixty Gorgeous Miles, Six Spectacular Cideries

Upstate New York is the 2nd largest and the oldest apple producing region in the US so it’s no surprise that the area is leading the nation in a craft hard cider renaissance!  The Hudson Valley is home to more than a dozen unique cideries and we’ve put together a local Craft Cider Trail for our guests to explore this apple season.

Did you know that cider was once the most commonly consumed beverage in America? From the colonial era to prohibition, cider was enjoyed by all as a safe and delicious alternative to potentially contaminated water sources.

By fermenting the juice of New York’s abundant apple crop, growers were able to preserve their produce year-round as an off-dry alcoholic beverage known as cider.  During Prohibition, however, growers were unable to produce or sell their cider because of federal regulations against alcohol.

Resourceful orchard owners began offering “sweet cider” for sale instead-  by selling their unfiltered apple juice blends before fermentation occurred, growers were able to bypass these government restrictions.  This allowed growers to remain in business and preserve their precious orchards until Prohibition was repealed.

Since then, America has developed a bit of a cider identity crisis.  The modern association of the word “cider” with the non-alcoholic unfiltered apple juice originally known as "sweet cider" is really a misnomer.  While sweet cider is still produced and enjoyed today, it bears little resemblance to the delicate drink known as cider which our forefathers imbibed.

But with new legislation in place that makes it easier for New York orchards to produce and sell “hard” cider, the venerable beverage is making a big comeback- and the Hudson Valley is leading the way. Our local Ulster County cider producers are using traditional methods and fresh local apples to craft world-class ciders for visitors to explore and enjoy.

Cider is so deeply rooted in our region that nationally recognized cider producer Angry Orchard recently chose to establish their flagship Innovation Cider House just 30 minutes away!

Bad Seed seeks to advance the craft cider industry by mixing old and new techniques with craft beer influences. Six Hiking Safety Tips You'll Be Glad You Learned Today

Outdoor recreation has never been more popular, and the Hudson Valley Resort & Spa is just minutes away from some of the best hiking areas in the region.  The Catskill and Shawangunk Mountains each have a special allure for hikers from all over the Northeast, and tens of thousands of people travel to the area each year for a chance to explore the outdoors.

Part of the adventure of hiking in the wilderness is the novelty of leaving civilization behind.  Escaping the relative safety, convenience and predictability of our modern world can be exhilarating, but it can also present a few risks for the unprepared.

These Six Hiking Safety Tips can get you into the woods for a great day on the trail- and help you safely return to civilization at the end of the day.


1. Carry a compass and a map, and learn how to use them.  Don’t rely on a GPS or other electronic device for navigation- you can’t charge your smartphone on the trail! Topographical maps of the Shawangunks and Catskills can be purchased from the NY / NJ Trail conference and are well worth the price- some people planning a simple day trip have gotten lost in the woods by hiking just a few minutes away from the road!  Practice with the compass near home, and make sure that it’s in good working order before you head out on the trail.

2. Come prepared!  Bring the proper clothing, necessary safety equipment and a first-aid kit.  Dress in layers so you can adapt your clothing to changing weather conditions. Never underestimated the time needed for the trip, and be prepared for the possibility of the hike taking longer than expected.  Check the weather forecast before heading out, and try to account for any scenario.

3. Take care of your feet while on the trail!  You’ll have a hard time hiking out safely if your feet are cramped and covered in blisters.  While regular fitness training will keep your feet in top shape for the trail, you should rest them frequently while hiking.  Wear sturdy boots and bring extra socks in case you get wet- remember: you can’t call a cab in the woods so you’ll have to be able to rely on your own two feet.

4. Always carry matches and learn how to properly build a fire. If something goes wrong in the wilderness, a fire really can save your life.  People rarely die from starvation in the woods, but they do from exposure. Keep yourself warm and dry when hiking, carry matches, and learn proper fire safety.

5. Let people know where you are going.  If you experience any problems on the trail, it's best if someone knows your plans. Sign in and out of trail-head registers, and always leave an itinerary behind with someone you trust.  It doesn’t hurt to carry a phone, but don’t rely on it!  Fully charge your battery before you head out, but be aware that you may find yourself miles from the nearest cell-tower.

6. Learn some basic survival skills.  Knowing how to get by in the wilderness doesn’t only make hiking more safe, it makes it more interesting!  Try to spot common edible and medicinal plants along the trail and notice possible shelter sites as you hike- it's a fun way to keep prepared for emergencies.
